Just to get some more insight are you recording the interviews for transcribing later, archiving, auditing or some other reason?

I am not an expert myself, but the interviews will be transcribed, translated (when appropriate if not English), de-identified and coded using dedicated software such NVivo, ATLAS.ti, before being analysed.
