Does anyone have any ideas on how to run a batch job and email/drop site
daily data dumps in order to potentially move the data from ODK aggregate
or the SQL database?

Depends on the platform, but on anything nix-based, you have a lot of

if you have it on google app engine then setup to export to google
spreadsheets - then set notification of changes on the spreadsheet so you
can get a weekly summary of changes..
