Does anyone know whether there is a way to copy an instance form from one
device to another,
the scenario might be someone begins to populate a form during an interview
- we want to be able to copy that instance to another persons device for
them to complete - maybe the next day.
I suspect the trick is being able to properly modify the instances.db file
and the instances.db-journal file in the metadata folder - by removing the
line for a particular instance on the initial device and adding it on the
second device.
Does anyone know whether there are tools or a file layout to be able to
modify these .db files?

These are standard SQLite database files. http://www.sqlite.org/
It is widely supported on a variety of platforms.
