is it possible to incorporate hidden fields (other than the metadata fields
that 'Build' offers) into an ODK collect form? Fields that still pass set
data forward in a submission?

I don't know about Build, but XLSForm supports calculate expressions which
are hidden fields.

Even if Build does not, you can create a calculated field in Build,
generate the XML, then scan for the start of the section in the XML,
and delete the prompt associated with that calculate expression to make it
hidden; this will generally be an .. region in the
section.
