Is there a javarosa function to save the form at any time?

No.
The form data is saved (for recovery purposes) on every swipe out of a
page.
The expectation is that you will not have one huge sheet of questions, but
one or a few closely-related questions on a single page in a multi-page
survey.
If ODK Collect crashes, if you select 'fill blank form' and choose the form
you were editing at the time it crashed, the last saved copy of that form
will be reloaded.

Ok, on every swipe out of a page the data is stored in the database, but to
generate an XML instance of the form I have to press the save button at
menu. This is not automatic.

Yes, it's not automatic. If this behavior is not what you need, then
please file a feature request at http://code.google.com/p/opendatakit
and hopefully someone will submit a patch.
