The problem I face is the following : On the tablet, users enter data like
the name of the person interviewed. For confidentiallity reasons, this name
has to remain on the tablet and does not have to be transfered to ODK
Aggregate.
I checked information regarding ODK Survey, it seems that it is still in a
beta version ?

Yes, Survey is in alpha and so should not be used in production.
One option is to use encrypted forms http://opendatakit.org/help/encrypted-forms and allow enumerators to
send all data to the server. Another option is to have a name/id
mapping in some app on the phone (or even on a sheet of paper) and
have enumerators store names there, but enter ids in the form.
