Sam,
By "Searcher," do you mean the person sending the data?
What was the data that was entered that triggered the problem? (Give one or
two examples.)
What service/tool did you use to gather the data? Was it ODK on a smart
phone?
Do you also use ODK to collect and analyze the data?
We're interested in testing this, if you can answer these questions.

Hi Sam
To reprouce and understand your issue, I've created an XLSForm with a text type:
http://hni.org/wp-content/uploads/2015/02/health_survey.xls
Then I made 3 different Smartphone submissions:
I then looked at the Submission Log and all 3 Submissions are displayed correctly:
http://hni.org/wp-content/uploads/2015/02/Submissions-AnalysisPage.png
I also exported the submissions to an Excel file and it worked correctly:
http://hni.org/wp-content/uploads/2015/02/Submissions-ExportToExcel.1.xlsx
Could you let me know if I've reproduced your issue correctly as it works fine for me. It would also help to get your form you used.
Best
