I have a form that pulls opening stock from Cvs values, but I want a way that the opening balance can keep changing from the CVs file after I submit the form.

No way to do that in ODK Collect without code changes (or sending data
to the server, editing the existing CSV, and re-downloading an updated
form). You should be able to do something like this with ODK 2.0, but
that code is in alpha so caveat emptor.
