I just downloaded ODK and the most recent Java on my mac. ODK won't let me select the Validate converted XForm with ODK Validate (Requires Java) option.

Reinstalled ODK, restarted ODK, reinstalled Java

Do you need to use an old version of XLSForm Offline? Your screenshot shows v1.9.0 and the current version is v2.0.0. If you need to use v1.x then there is a v1.11.1 - all releases are available at https://github.com/getodk/xlsform-offline/releases
With XLSForm Offline v2.0.0 an macOS running 10.15.1 I had no issues.
