How to convert ODK collect xml files to excel file

Could you provide more context to help us understand your workflow.
Which XML files do you mean - the form definition (XForms is XML, while XLSForm is XLS) or the raw XML submissions, as you'd find them inside ODK Collect before uploading?
Where are these XML files coming from (Aggregate? Central?), what do you need to do with them, what technologies / programming languages can you use (Python? R?), which parts of the docs did you find helpful?
