I’ve arrived at this old thread, after seeing it mentioned in a few other threads that I found while looking for a way to create a Table matrix with question types that are not exclusive to select_one or select_multiple. For example, text (multiline) and dropdown questions.
It seems that nowadays, this is possible with Grid Theme - and it’s the only way to do so. Am I right?
Nothing has changed in this area. The Grid Theme is only available in Enketo, not in ODK Collect.

My question was whether a matrix table with text multiline or select_one dropdown is possible today, with Theme Grid (via Enketo naturally).
Example:
I just tested with a matrix table, using theme grid. Text (single line) is possible. Text multiline is not supported apparently.
I'd also benefit from this grid view on Collect. Mainly decimal, integer, text, and select_one question types
