You likely want to use the OData connector. On the Submissions page for your form, there should be a button for "Analyze via OData..." that will provide details for connecting a live representation of the data to OData-capable tools like Microsoft Power BI, Microsoft Excel, Tableau, and others. We've had inconsistent results across different versions of Tableau when we've tried it with Central. If you do try this, please let us know the version of Tableau you used and how it went for you!
