Hi,
I am a complete novice to ODK. I am designing a study where data entry would be conducted using ODK on Android tablets. It is not clear to me on the ODK website information what server is used/could be used when data is entered and stored on a server. Is this a common server that ODK applications are connected to? Or should our study have its own server to which the application is connected and data uploaded to?

It depends on the size of your study:
a) you may use common server at such services as kobotoolbox.org etc.
b) install your own server on Google Cloud Platform cloud.google.com
c) install your own server on a local computer

Option B is what a lot of our users do and you can try it at
https://opendatakit.org/use/aggregate/. You can install Aggregate on
hardware you control or on Google App Engine. GAE is the common
choice.
