I am happy to inform you that there is indeed an ODK Collect-like application for iOS. Your colleagues can look for GIC Collect on the App store.

Can you tell me if the way to build the forms and upload them to the destination URL works the same as for Android?

To answer your question, yes it is. The app simply connects to your server, so whatever your server is dishing out, it'll just take a plateful.
