Welcome to the ODK Community! To my knowledge, there are not any official ODK training resources, though you can find some options with a quick google (e.g. this one).
In my experience, the community is broken up into those who are self-taught and enjoy the learning-by-doing approach. Since the ODK software is free to host yourself, you can get started pretty easily on your own local environment. All the documentation you would learn in a course is available here: docs.getodk.org. You can also find a smaller, simpler version of the form creation documentation here: xlsform.org.
Finally, if your use-case needs a “professional” certification, you can always look into paid ODK hosting, such as that offered directly from getodk.org.
