is there a tool that converts from an XML xform to an xls?

Not that I'm aware of. The back-conversion would likely be incomplete and
require hand-editing to fix.
I've gotten into the habit of including the XLS file for a form as a media
attachment for the form, so that it gets distributed out to all the devices
together with the XML file. That way, you know you always have a copy of it
and can always go back to the XLS file if you need to revise things.
Wastes a bit of space, but is generally smaller than a photo, so it isn't a
huge waste.
